Eiswein is the sweet nectar that results when ripe grapes freeze on the vine. If the grapes are left long enough on the vine this will happen in the colder climates of Austria Germany and Canada.
The sugary juice has a higher freezing point than water so it stays as a liquid. When pressed, the juice flows and the frozen water stays behind.
The sweet juice and resultantly the wine is high in both sugar and acid.
This makes it very special and unique.
Wines affected by noble rot also have a similar combination but the Eisweins tend to be more racy and refreshing.
In Austria and Germany the fruit has to freeze on the vine. They cannot be frozen after harvest. The fruit has to be pressed in cooler temperatures and quickly so that the frozen water may not melt. It is not very easy to make this special wine - the Eiswein.
The process is similar in Canada as well where it is call Icewine (one word).
In some wine making countries it is acceptable to freeze the grapes after harvest and then make the wine. In which case they are called Ice Wine (two words).
